African Stew, Get your veggies!
As we flip over the calendar to a new year we often think of new things we want to do to be more healthy. Here’s a recipe for a vegetarian African Stew I use often. It’s delicious and super simple. Here’s all you do…
2 Tbsp olive oil
1 medium onion, finely chopped
2 cloves of garlic, finely chopped
1-2 jalapenos, seeds removed and minced
14.5 oz can diced tomatoes, not drained
1/2 cup sun butter (I find it at Trader Joe’s)
2 cups water
1 tsp sea salt or to taste
1 pound sweet potatoes, peeled and diced
1 can black beans, rinsed and drained
1 1/2 cup corn fresh or frozen
1 cup spinach, lightly packed
1 cup arugula, lightly packed
In a large pot heat the oil and cook the onion until soft. Add the garlic and jalapeno cook another five minutes. Add the tomatoes, sun butter, and stir until smooth. Add the water, salt, and sweet potatoes. Simmer until potatoes are tender, about 15 minutes. Add the beans, corn, spinach, and arugula, simmer until heated through. Add more salt and pepper to taste if desired. This recipe freezes well, so enjoy today and have some next month too.
