Lentils for Breakfast? Yes Please!

In my endless search for interesting ways to eat protein first thing in the morning I found this lentil recipe. If you to want a switch from eggs you can try this too. (True confession: I will often put a fried egg on top of this stew. I can’t help it! I love the yoke. Yummmm)

Lentil Stew

1 Tbsp olive oil

1 small onion diced (about 1/2 cup or more to taste)

3 cloves of garlic, minced or pressed (I add an extra one if they are small)

3/4 cup carrots sliced into thin rounds

salt and pepper to taste

2 cups cooked lentils (16 oz can or, Trader Joe’s has a great package in their produce section ready to go, add it all)

3 to 4 tsp coconut amino acids (will make stew slightly sweet) or tamari (gluten free soy sauce)

3/4 cup veggie broth

Heat the olive oil in a large saucepan over medium high heat saute the onion until translucent.

Add garlic and saute until fragrant.

Add carrots, salt and pepper. Cover and cook until the carrots are tender, about 5-7 minutes.

Stir in the lentils and acids or soy sauce, simmer for 5 minutes.

Add the veggie broth and give it another 5 minutes.

Serve with fried egg on top if desired.
