Veggies for Breakfast 2022
I struggle to get my five servings of veggies everyday. But I like to set myself up for success by starting with a breakfast of Eggs Florentine. It sounds so fancy and it’s easy to pull off. Here’s all you do:
Toast a piece of your favorite bread or English muffin, no butter
Grab a hand full or two of fresh spinach and wilt it in a fry pan on the stove top (low heat while it “melts”)
Remove spinach from pan and squeeze it in paper towel to remove extra moisture
Fry an egg in the pan (I use a dab of butter) (You can use a scrambled egg if you prefer)
In the meantime chopped the spinach (I snip it with scissors) and place in a small bowl
Add some shredded parmesan cheese and a dab of mayo (just enough to hold the spinach together) Combine
Season to taste, try garlic salt, or lemon pepper, or lemon zest
Layer the spinach on the toast and place the egg on top
Voila! Veggies for breakfast!
