Veggies for Breakfast 2024
Eating carrots for breakfast will make you feel better in body and spirit, cuz you’re a bass ass who knows how to take care of yourself and get a veggie serving in before noon! I tried both of these recipes just because I wanted to see if they really worked. And they did! I was very surprised. Bonus deal: they both taste good too. If you are trying to start the day in a healthy way I’m cheering you on with carrots.
Carrot Cake Overnight Oats (Original recipe by Sharon Palmer)
1/2 cup old fashion oats
1/2 tsp cinnamon
1/4 tsp allspice
1 Tbsp unsweetened shredded coconut
2 Tbsp walnuts (I like pecans)
1/4 cup shredded carrot
1/2 tsp vanilla
3/4 cup plain unsweetened plant-based milk (or regular milk if you prefer)
In a mason jar or glass container with lid, layer in the ingredients. Cover and refrigerate overnight.
In the morning give it all a stir and then zap it in the microwave.

“Smoked Salmon” on Bagels (Original recipe by Jean-Philippe Cyr)
4 cups grated carrots (about 4 large carrots)
1/2 small red onion minced
3 Tbsp capers, chopped
2 Tbsp olive oil
2 Tbsp lemon juice
1 Tbsp liquid smoke (found by the barbecue sauces in the grocery store)
1 Tbsp maple syrup
Salt to taste
In a large bowl combine all the ingredients. Let it sit for at least one hour, overnight is best. This lets the flavors develop.
Spread on (spoon on really) a bagel or multi grain toast.
Yes, it really does taste like smoked salmon, though I confess it may be the power of suggestion.
